Preheat oven to 400. Line a muffin tin with paper liners or grease well. Set aside. In a medium bowl, whisk together flour, salt, baking powder, and cinnamon. Whisk in sugar. In a separate bowl or glass measuring cup, mix oil, egg, milk, and vanilla. Mix well. Add wet ingredients into flour mixture. Add slowly, don't overmix. Fold in peaches. In a small bowl, mix cream cheese, lemon zest, sugar, and cinnamon. Mix until smooth.
Fill each muffin cup half way. Next, add a small spoonful of cream cheese filling to each muffin cup. Cover the cream cheese filling with remaining batter. Sprinkle each muffin with cinnamon and sugar. Bake 17-20 minutes, or until muffins are golden brown. Remove muffins from pan and cool on a rack. |
