Preheat oven to 400 F. Grease muffin cups or line with muffin liners. Combine flour, sugar, salt, and baking powder. Place vegetable oil into a cup, add egg and vanilla and enough buttermilk to make 1 cup. Mix gently with flour mixture. Do not overmix. Fold in blueberries. Fill muffin cups halfway only, then sprinkle with crumb topping mixture. Bake 18-20 minutes.

Notes May use any combination of nuts and fruits, huckleberries, or mini-chocolate chips. Makes 24 mini or 12 regular muffins. | |||||
