ZZ Blueberry Crumb Muffins COMPARE TO OBB

1 1/2 cups flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1 tsp vanilla
1/3 cup buttermilk
1 1/2 cups fresh blueberries
Crumb Topping
1/2 cup brown sugar
1/3 cup flour
1/4 cup very cold butter, cubed
1 1/2 tsp cinnamon
Preheat oven to 400 F. Grease muffin cups or line with muffin liners. Combine flour, sugar, salt, and baking powder. Place vegetable oil into a cup, add egg and vanilla and enough buttermilk to make 1 cup. Mix gently with flour mixture. Do not overmix. Fold in blueberries. Fill muffin cups halfway only, then sprinkle with crumb topping mixture. Bake 18-20 minutes.

Crumb Topping Mix ingredients with fork, and sprinkle over muffins before baking.

Notes
May use any combination of nuts and fruits, huckleberries, or mini-chocolate chips. Makes 24 mini or 12 regular muffins.
