Perfect Lemon Bars

Crust
1 3/4 cups flour
2/3 cup powdered sugar + extra
1/4 cup cornstarch
1/2 tsp salt
1 1/2 sticks butter, soft
Filling
4 large eggs
1 1/3 cups sugar
3 Tbsp flour
2 tsp grated lemon zest, (2 lemons)
2/3 cup fresh lemon juice (3-4 lemons)
1/3 cup milk
1/8 tsp salt
Preheat oven to 350 degreesF. Line a 9x13-inch baking pan with foil or parchment paper and grease the foil/parchment. Stir together flour, powdered sugar, cornstarch, and salt. Add butter and cut into dry ingredients using a pastry blender until mixture resembles coarse meal.

Sprinkle mixture into prepared pan and press into an even layer on the bottom and about 1/2-inch up the sides of the pan. Refrigerate for 15-30 minutes. Bake until golden brown, about 20 minutes.

For filling, whisk together eggs, sugar, and flour and then stir in the lemon zest, juice and milk. Pour the filling onto the warm crust and reduce the oven temperature to 325 degrees. Bake 18-20 minutes until the filling feels slightly firm to the touch. Cool to room temperature, then sprinkle with additional powdered sugar and cut into bars.
