Chocolate Coconut Macaroons

2/3 cup sweetened condensed milk
1 large egg white
1½ tsp vanilla
1/8 tsp salt
3½ cups coconut
10 oz semi-sweet or milk chocolate
Preheat oven to 325°F. Line two baking sheets with parchment paper or  mat. In a large bowl, stir together milk, egg white, vanilla, and salt. Add coconut and mix well. With a spoon, scoop up 2 Tbsp dough and form into balls, then place on baking sheets, about 2 inches apart. Form cookies into mounds that have a peak at top.

Bake cookies 15-20 minutes until golden brown. Cool on baking sheets until firm and set. Remove onto cooling rack. Melt chocolate in microwave and stir every 20 seconds until melted. Lay out a large piece of parchment paper. Dip cookies into chocolate, just so bottoms are covered. Set dipped cookies on paper to dry. Dip all cookies and drizzle tops with extra chocolate. Let cookies sit until chocolate has dried.
