Pumpkin Oatmeal Scotchies

1 1/4 cup cups flour
1 tsp baking soda
1/2 tsp pumpkin spice
1/2 tsp cinnamon
1/4 tsp nutmeg, salt
1/2 cup butter, softened
3/4 cup sugar, brown sugar
1 large egg
1 tsp vanilla
1 cup pumpkin puree
3 cups old-fashioned oats
1 1/2 cups butterscotch chips
Regular Scotchies
1 cup cup flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 large eggs
1 tsp vanilla
3 cups old-fashioned oats
2 cups butterscotch chips
Preheat oven to 375F. Line two baking sheets with parchment paper or baking mat and set aside. Whisk flour, baking soda, pumpkin spice, cinnamon, nutmeg, and salt. Set aside. Beat butter, sugar and brown sugar until smooth and creamy. Add egg and vanilla.

Add in pumpkin and mix until combined. Slowly add in flour mixture. Stir in oats and butterscotch chips. Drop dough onto prepared sheets. Bake 10-12 minutes until cookies are set and golden. Remove from oven and cool on baking sheet 2 minutes. Transfer to a wire rack and cool completely.

Scotchies Pan Cookie Spread dough into greased 15x10 pan. Bake 375 for 20-25 minutes. Cool completely, cut into squares.
