Buttermilk Biscuits

3 cups flour, + more for dusting
1 1/2 Tbsp baking powder
1/2 tsp baking soda
1 tsp salt
9 Tbsp cold butter, cubed
1 1/2 cups buttermilk
Version Two:
1 1/4 cup cake flour
3/4 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup cold butter, cubed
3/4 cup buttermilk
Preheat oven to 500. Sprinkle flour on a work surface. In a medium bowl, whisk together flours, baking powder, baking soda and salt until well blended. Add butter and cut into flour using a pastry blender until mixture resembles coarse crumbs. Pour in buttermilk and stir lightly until dough comes together in a ball.

Dump dough mixture onto floured work surface. Lightly knead dough a few times until fairly well blended. Pat into a circle, 3/4 – 1 inch thick. Dip cutter into flour and cut biscuits without twisting. Form the dough scraps into an extra biscuit instead of re-rolling. Place biscuits on baking sheet so sides are touching. Brush tops with melted butter. Place baking sheet in the middle of oven and bake 8-10 minutes until golden brown. Remove biscuits to a wire rack to cool for a few minutes.
