Cowboy Cookies

1 cup flaked coconut
3/4 cup chopped pecans or walnuts
1 cup butter, softened
1 1/2 cups brown sugar
1/2 cup sugar
2 large eggs
1 1/2 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
2 cups old-fashioned rolled oats
1 1/2 cups chocolate chips
Preheat oven to 350F. Spread coconut and nuts on a large baking sheet and bake 6 minutes until toasted, stirring every few minutes. Set aside to cool.

In a large mixing bowl cream butter and sugars until fluffy. Add eggs and vanilla. In a medium bowl combine flour, baking soda and salt and gradually add to creamed mixture. Stir in toasted nuts, coconut, oats and chocolate chips. Drop Tbsp size balls onto greased baking sheet. Bake 10-12 minutes until brown. Cool on wire racks.

Notes
Different ovens, altitude, elevation, climate, butter temperature, and a whole myriad of factors can affect the outcome of cookies and other baked goods. If cookies bake up too lacy, buttery, and flat, check that butter wasn’t too soft, or try adding a couple tablespoons more flour, especially if at a high elevation.

If cookies bake up like round domes instead of flattening beautifully, make sure the butter is soft enough and not too cold, or decrease flour or other dry ingredients by a couple of tablespoons.
