White Chocolate Craisin Oatmeal Cookies

1¼ cups flour
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup butter, softened
½ cup brown sugar
½ cup sugar
1 egg
1 tsp vanilla
1 cup old-fashioned rolled oats
1 cup white chocolate chips
1 cup Craisins
Preheat oven to 375F. Line or spray baking pan; set aside. In a medium bowl whisk together flour, baking powder, baking soda and salt; set aside. In mixer, cream butter and sugars until light and fluffy, about 3 minutes.

Add egg and vanilla and mix until well combined. Reduce speed to low and gradually add flour mixture, mixing until just incorporated. Using a rubber spatula, stir in oats, white chocolate chips and dried cranberries.

Roll dough into balls and place on baking sheet. Flatten tops slightly with fingers. Bake until cookies turn slightly golden 9-10 minutes. Remove from oven and cool on baking sheet 2 minutes. Transfer to a wire rack until cool. Store in airtight container at room temperature.
