Blueberry Cheese Crumble Bars

3 cups flour
1 cup sugar
1 tsp baking powder
¼ tsp salt
1 cup cold butter, cubed
1 egg
Filling
3 8-oz bars cream cheese, softened
1 cup sugar
2 tsp vanilla
2 21-oz cans pie filling of choice

Glaze
½ cup powdered sugar
1 to 2 Tbsp heavy cream or milk
¼ tsp vanilla

Preheat oven to 375F. Lightly grease 9x13 baking pan. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Cut in butter with pastry cutter, and then add egg. Press half of dough into prepared pan and bake 8-10 minutes, until light golden brown. Cool on a wire rack.

Filling  In a separate large bowl, beat cream cheese and sugar on medium speed with mixer until smooth, 2-3 minutes. Add vanilla and mix. Using an offset spatula, spread cream cheese mixture evenly over crust. Spoon pie filling evenly over cream cheese layer. Crumble remaining dough over pie filling. Bake 45-50 minutes, until top is light golden brown. Cool completely.

Glaze  In a small bowl, whisk together powdered sugar, cream and vanilla. Adjust thickness to preference with more cream or powdered sugar. Drizzle Glaze over bars and allow to set. Serve at room temperature or chilled. Store leftovers covered for up to 4 days in refrigerator.
