Berry Syrup

2 cups frozen berries
1 cup maple syrup

Version Two
1/2 cup water
1/2 cup sugar. more to taste
1 Tbsp cornstarch
1 tsp lemon juice
2 cups fresh raspberries, divided
Combine fruit with syrup in sauce pan over low heat. With back of a spoon gently press berries against side of pan, just until they begin to break apart. (for a smoother syrup, press it through a sieve). When it has reached the desired temperature, transfer mixture to bottle and serve. Use within 4-5 days. Makes 3 cups.

Version Two In a sauce pan, whisk together water, sugar, cornstarch, and lemon juice. Whisk until cornstarch is blended with no lumps. Cook over medium heat until mixture begins to boil. Add 1 cup raspberries and cook 1 minute until mixture thickens. Remove from heat and fold in remaining 1 cup of raspberries. Serve sauce over waffles, pancakes, ice cream, cheesecake, crepes, etc.
