Strawberry Cream Cheese Waffles

2 ½ cup flour
1 tsp salt
4 tsp baking powder
3 Tbsp sugar
2 eggs
2 ½ cups milk
½ cup canola oil
1 tsp vanilla
4 oz cream cheese
1 cup chopped strawberries
Version Two
1 3/4 cups flour
1 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1 cube butter, melted
1 cup milk, more to thin
1/2 cup sour cream
3 large eggs
In a large bowl, whisk together the flour, salt, baking powder, and sugar. In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla. Cut the cream cheese into slices and then cut each slice into little cubes of cream cheese. Keep them all separated on a plate. Set aside. Stir the wet ingredients into the dry ingredients until just combined. Let the batter rest for 2 minutes and then fold in the strawberries. Do not over beat. Pour the batter into a preheated waffle iron. Drop a few cubes of cream cheese into each waffle. Bake until lightly browned. Serve with strawberry sauce and sweetened whipped cream.

Version Two  Heat waffle iron. Lightly oil grids. Meanwhile, whisk the flour, sugar, baking powder, and salt in a large bowl to combine and make a well in the center. Whisk the melted butter, milk and sour cream, and eggs in a medium bowl until well combined and pour into well. Whisk until smooth, do not over mix. Spoon about 1/4 cup of the batter into the center of each quadrant of the waffle iron and close the iron. Cook until the waffle is golden brown, 3-4 minutes. Serve the waffles hot, with the syrup passed on the side.
