Gingerbread Waffles

2 cup flour
3 tsp baking powder
1 tsp ginger
1 1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp cloves
2/3 cups brown sugar
2 eggs, separated
1/4 tsp cream of tarter
1 1/2 cups buttermilk
1/2 cup molasses
6 Tbsp butter, melted
Lemon Whipped Cream
1 1/2 cup heavy whipping cream
5 Tbsp powdered sugar
4 tsp lemon juice

Combine first six ingredients in a large bowl and set aside. Next combine brown sugar and egg yolks until fluffy. then add buttermilk, molasses and butter. Next combine wet ingredients to dry ingredients. Don’t over mix. In a medium bowl whip egg whites with cream of tarter until light and fluffy. Gently fold egg whites into batter. Cook waffles in a hot waffle iron.

Lemon Whipped Cream Pour heavy whipping cream into a large bowl. With a hand mixer set on high, whip cream until it starts to thicken. Add powdered sugar a Tbsp at a time while mixing. Add lemon juice. Mix until cream is thick. Serve over waffles.
