ZZ? Apple Raisin and Walnut Baked Oatmeal

2 cups regular oats
˝ cup walnuts, toasted, chopped
1˝ tsp cinnamon
1 tsp baking powder
˝ tsp fine sea salt
2 cups milk
⅓ cup maple syrup
1 egg
3 Tbsp butter, melted
2 tsp vanilla
2 Gala apples, peeled, diced
1˝ cups raisins
Version Two
1 cup whole rolled oats
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
3 Tbsp maple syrup
2 medium apples, peeled, diced
1 ripe banana, mashed
1/4 cup walnuts, chopped
1 1/4 cups milk
Preheat oven to 375F. Grease a 9x9 baking dish. Stir together the oats, half of the walnuts, cinnamon, baking powder and salt; set aside. In a separate bowl, whisk together the milk, maple syrup, egg, half of the melted butter and vanilla; set aside.

Arrange the sliced apples on the bottom of the dish. Sprinkle 1 cup of the raisins over the apples, then sprinkle on the oat mixture. Slowly drizzle the milk over the oats. Sprinkle the top with the remaining walnuts and raisins. Bake 35-45 minutes, or until golden brown and the oatmeal is set. Remove from the oven and let sit for at least 5 minutes. Drizzle the remaining melted butter over top and serve.

Version Two Preheat oven to 350F. Grease a 9-inch pie plate with butter. Combine all the ingredients in a large bowl and mix well. Pour into the pie plate and place on a baking sheet. Bake 25 to 30 minutes or until the liquid is absorbed (don’t over cook or it will dry out). Remove from the oven and let cool. Serve with yogurt or milk and honey. Sprinkle on your favorite nuts.
