Quick Dinner Rolls

1 1/4 cup milk, scalded
4 Tbsp butter
3 Tbsp sugar
1 tsp salt
2 eggs, beaten
1 rounded Tbsp yeast + 1/2 tsp sugar
1/2 cup warm water
4 cups flour, + more for kneading
Version Two {BEB}
1/2 cup ea water + milk (110 F)
1/3 cup white sugar
1 pkg (2 1/4 tsp) pkg active dry yeast
1/3 cup butter, softened
1 tsp salt
1 egg
3-3/4 cups flour
1/4 cup butter, softened
Sprinkle yeast and sugar over warm water. Melt butter in scalded milk. Cool until lukewarm. Add eggs, 3 Tbsp sugar, salt and dissolved yeast to a bowl. Mix in cooled butter/milk mixture. Add flour and stir to combine. Knead dough on floured surface until smooth. Roll out and shape into rolls. Cut into balls or strips and tie in knots. Bake 10-12 min at 400.

Version Two Warm water and milk to 110 F. Pour into mixer bowl; add sugar and stir to dissolve. Add yeast and let set 10-20 minutes to proof. Mix on low adding salt, butter and egg. Add flour 1/4 cup at a time. Remove paddle and attach dough hook. Knead dough 5-10 minutes or until smooth and elastic.

Remove dough from bowl and shape into desired shapes (cut dough into quarters, and then quarter again and then rolled each piece into a ball). Cover and let rise in a warm place one hour. Brush tops of rolls with half of softened butter. Preheat oven to 400F and bake 10-15 minutes or until golden brown. Brush with remaining butter.
