Porcupine Meatballs

1 1/2 lb ground beef
3/4 cup raw long grain rice
3/4 cup evaporated milk
3 Tbsp finely chopped onion
1 1/2 tsp salt
pepper to taste
1 can condensed tomato soup
1 1/4 cup water
Version Two
1 can condensed tomato soup
1 lb ground beef
1 cup uncooked instant rice
1 egg, slightly beaten
1/4 cup minced onion
1 tsp salt
2 Tbsp shortening
1 clove garlic, minced
1 tsp prepared mustard
Preheat oven to 375. In a bowl, combine beef, rice, milk, onion salt and pepper. Shape meat/rice mixture into meatballs. Use a small cookie scoop to keep uniform. Place meatballs in a large skillet and brown outside. Place browned meatballs in a 9 x 13 inch baking dish.

In skillet meatballs were cooked in, add soup and water. Pour soup mixture over meatballs in baking dish. Cover with foil and bake 30 minutes. Remove foil and stir. Cover with foil and bake 15 more minutes.
