Breakfast Burritos

2 lb ground pork sausage, browned
2 cups hash browns or Tater Tots, chopped, cooked
8-10 eggs, beaten
1/4 cup milk
1/2 tsp salt
1/4 tsp pepper 
10-oz. can diced tomatoes with chiles OR
1 diced tomato + 1 4-oz can diced green chilies
3/4 cup sweet peppers, diced, optional
2 cups Cheddar or Mexican-blend cheese, shredded
8 10-inch flour tortillas
Brown sausage in one pan and scramble eggs with milk/cream, salt & pepper, in another. Combine all ingredients except tortillas and mix thoroughly. Divide mixture evenly among tortillas and roll tightly. Seal tortillas by cooking 1-2 minutes on a hot griddle sprayed or oiled.

For Freezer Freeze burritos in single layer on a cookie sheet. When fully frozen (in about 1 hour) place burritos in large zip-top freezer bag; freeze. Serve: Wrap in a paper towel. Cook in microwave until heated through (about 1 1/2 to 2 minutes).

Notes
May use sausage, ground beef, or diced cooked ham combination for meat.
