Lemon Crumb Muffins

3 cups flour
2 cups sugar
1/2 tsp baking soda
1/2 tsp salt
4 eggs
1 cup sour cream
1 cup butter, melted
2 Tbsp grated lemon peel
1 Tbsp lemon juice
Topping
3/8 cup flour
3/8 cup sugar
3 Tbsp cold butter, cubed

Glaze
1/2 cup sugar
1/3 cup lemon juice

In a large bowl, combine flour, sugar, baking soda and salt. In another bowl, combine eggs, sour cream, butter, lemon peel and juice. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full. In a small bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Sprinkle over batter.

Bake 350° 20-25 minutes or until a toothpick inserted comes out clean. Cool 5 minutes before removing from pans to wire racks. In a small bowl, whisk glaze ingredients; drizzle over warm muffins. Serve warm.

Notes
The muffin batter is very thick and sticky, but the results are very delicious.
