How To: Biscuit Mix

6 cups flour
3 Tbsp baking powder
1 Tbsp salt
1 cup shortening
Variation
10 cups flour
1/2 cup baking powder
2 Tbsp white sugar
2 tsp salt
1 1/4 cups vegetable oil
Sift flour, baking powder and salt three times into a large bowl. Cut in shortening with a pastry blender until mixture resembles fine crumbs. Store mixture in airtight container in the refrigerator up to 4 months. Use whenever your recipe calls for "Bisquick mix".
Notes
For cake flour: add 2 Tbsp cornstarch per cup and add flour to make 1 cup. Then sift through a fine-mesh strainer.
