In a large bowl, combine all of the above ingredients. Fold the mixture until well combined. Serve on croissants or over red lettuce leaves.
Version Two Chop both apples into small cubes, and place into a bowl. Sprinkle over 1 Tbsp of lemon juice over apples to prevent browning. Add chopped chicken, chopped celery, and Craisins. Mix well. Add 1 cup mayonnaise and stir well. Add additional mayonnaise to taste. Season with salt and pepper, add almonds to taste. Allow flavors to blend in the refrigerator in a covered container for about an hour before serving. |
