In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in bananas. Combine flour, graham cracker crumbs, baking powder, baking soda, and salt; gradually add to creamed mixture and mix well. Fold in nuts and cranberries. Pour into a greased 8x4 loaf pan. Bake 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. |
