Apple Streusel Muffins

2½ cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp allspice
1 cup buttermilk
⅓ cup vegetable oil
⅓ cup brown sugar
1 egg
1 tsp vanilla
1 apple cored, chopped (1½ cups)
Streusel Topping
2 Tbsp butter, softened
3 Tbsp sugar
½ tsp cinnamon

Optional Glaze
1 1/2 cups powdered sugar
1 to 2 Tbsp milk
1 tsp butter, melted
1/4 tsp vanilla
1/8 tsp salt

Preheat oven to 350 F. Line a standard muffin tin with paper liners; set aside. In a medium bowl, whisk flour, baking powder, baking soda, salt and allspice; set aside. In a large bowl, whisk buttermilk, oil, brown sugar, egg and vanilla until well combined. Add flour mixture to wet ingredients and, using a rubber spatula, fold until mostly combined. Add chopped apple and fold in gently. Divide batter evenly between muffin cups.

Bake 15-20 minutes, or until a toothpick inserted comes out clean. Cool 10 minutes in pan, then remove to a wire rack. Muffins can be stored in an airtight container at room temperature for up to 3 days, or in the freezer for up to 1 month.

Streusel Topping Stir together butter, sugar and cinnamon until thoroughly combined, then spoon evenly over tops of each muffin.

Optional Mix Glaze ingredients and drizzle over baked muffins.
