Caramel Kiss Peanut Butter Cookies

1 cup butter, softened
1 1/2 cups creamy peanut butter
1 1/2 cups sugar
1 1/2 cups brown sugar
3 tsp vanilla
4 eggs
1/4 tsp salt
2 tsp baking soda
4 cups flour
3 cups chopped Hershey’s Caramel Kisses (or chocolate chips or chunks)
Preheat oven to 350F. Line with a Silpat or spray a baking sheet with non-stick cooking spray. Set aside. In a large bowl, whip butter, peanut butter, sugar and brown sugar together until light and fluffy. Stir in vanilla and eggs. Scrape sides and mix again. Slowly incorporate all dry ingredients until combined. 

Stir in chopped Hershey’s caramel kisses (or just place on top of cookies after dough is placed on cookie sheets). Scoop by the tsp full onto prepared baking sheet. Bake 9-10 minutes or until the edges are barely golden and the middle looks like it’s not quite done. Do not overcook. Cool on baking sheet 5 minutes before transferring to cooling rack. Store in airtight containers.

Makes 4 pans of cookies (5x4 rows = 80).
Notes
Makes a soft, delicious cookie if not over-baked.
