Broccoli Cheese Soup

1 3/4 cups chicken broth
1 small onion, diced
1/3 cup flour
1/4 cup butter
1/2 tsp pepper
1/2 tsp salt
1/2 tsp dry mustard 
2 cups milk
1 1/2 cup shredded Cheddar cheese
1/2 cup shredded Swiss cheese
2 1/2 to 3 cups broccoli, chopped
PW Version:
1 onion, diced
1 stick butter
1/3 cup flour
4 cups milk
2 cups half-and-half
4 heads broccoli, chopped
1 pinch nutmeg
3 cups Cheddar or Jack cheese
dash salt and pepper
chicken broth as needed
Simmer chicken broth and chopped onion for 15-20 minutes in a covered small saucepan, until onions are soft. Heat milk in microwave for 1-2 minutes. In a separate medium-sized stockpot, melt butter then add flour, mustard, salt and pepper. Cook together, stirring constantly, for 2 minutes, then whisk in warmed milk. Stir and heat together on medium heat until soup starts to thicken, about 5-8 minutes. Add warmed chicken broth and continue to stir until well blended. Add cheeses and stir until completely melted. Stir in seamed broccoli. Add more salt and pepper to taste, if needed. Serve immediately in bowls or bread bowls.

PW Version: Melt butter, add onions. Cook 3 to 4 minutes, sprinkle flour on top. Stir to combine, cook 1 minute, add milk and half-and-half. Add nutmeg, broccoli, dash salt, and plenty of black pepper. Cover, reduce heat to low. Simmer 20 to 30 minutes, or until the broccoli is tender. Stir in cheese and allow to melt. taste seasonings and adjust if needed. Serve in bread bowls.
