Sweet Potato Mini Loaves

1 cup warm water
2 1/4 tsp active dry yeast {1 envelope}
1/4 cup + 1 tsp sugar
2/3 cup mashed sweet potato
1 egg
1/4 cup melted butter, cooled
3/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
3 1/2-4 cups bread flour
Orange Honey Butter
1/4 cup softened butter
1/4 cup honey
1/4 tsp cinnamon
2 tsp orange zest
Pierce 1 medium sweet potato and microwaved on high 7 minutes. Cool 10 minutes, scoop out insides and mash. Pour warm water into bowl of a stand mixer. Sprinkle yeast and 1 tsp of sugar over water. Swirl to combine and proof yeast, 5 minutes. Stir in remaining sugar, sweet potato, egg, and melted butter. With mixer on low, slowly add salt, cinnamon, nutmeg and flour {in 1/2 cup increments, switching to 1/4 cup increments as the dough starts to form}. Once dough has pulled away from sides and is tacky, turn mixer on medium to high speed and knead 6 minutes.

Remove dough and place into a greased bowl. Turn dough around in bowl to lightly grease dough. Cover with plastic wrap and let rise 1 hour in a warm place. Remove plastic wrap, punch down dough and divide into 8 equal pieces. Roll into logs and place in greased mini loaf pans. Lightly cover loaves with plastic wrap and let rise another hour. Preheat oven to 350F. Bake 20 minutes or until tops are lightly golden. Set aside to cool.

Orange Honey Butter Mix all ingredients together until incorporated. Serve with warm rolls or bread.
