Baked Chimichangas

1/4 cup vegetable oil
1 onion, chopped fine
1 can black beans, drained and rinsed
1 1/2 cups cooked rice
2-3 cups diced, cooked chicken
1 cup Cheddar and/or Jack cheese
1/2 cup chopped cilantro
1/4 tsp each salt and pepper
6 large burrito-size flour tortillas
Place a rimmed baking sheet in oven and heat to 450 degrees. In a large skillet, heat 2 Tbsp oil over medium heat until oil is shimmering. Cook onion until it is just softened, about 3 minutes. Stir in the beans, rice, chicken and cook until the mixture is heated through, about 3 minutes. Turn off heat, stir in the cheese and cilantro. Season with salt and pepper to taste.

Stack tortillas on a plate, cover with a damp paper towel. Microwave tortillas until warm and pliable, 1 minute. Top each tortilla with the chicken mixture, leaving a 2-inch border at the bottom of the tortilla. Fold in the sides and roll up the tortilla tightly. Brush with remaining oil and arrange seam side down on the hot baking sheet. Bake until golden brown and crisp, 8-10 minutes. Serve.
