Preheat oven to 350F. Line or spray a muffin pan. Sift together flour, baking soda, salt and nutmeg into a large bowl. In a separate bowl, whisk together bananas, both sugars, butter, milk and egg. Pour over the dry ingredients and fold to combine. Add 1/2 cup macadamia nuts and fold gently to combine. Divide batter evenly in muffin cups, 2/3 full. Sprinkle tops with the remaining chopped macadamia nuts. Bake until golden brown and a knife inserted into the center comes out clean, 20-25 minutes. Cool in pan 10 minutes, then remove to a wire rack to cool completely. |
