Banana Macadamia Muffins

1½ cups flour
1½ tsp baking soda
¼ tsp salt
⅛ tsp nutmeg
1¼ cups bananas, mashed (3 large)
½ cup sugar
¼ cup brown sugar
½ cup butter, melted, cooled
¼ cup milk
1 large egg
1 cup macadamia nuts, chopped, toasted
Streusel Topping
1/3 cup brown sugar
1 Tbsp flour
1/4 tsp cinnamon
1 Tbsp cold butter
1/4 cup chopped walnuts
Preheat oven to 350F. Line or spray a muffin pan. Sift together flour, baking soda, salt and nutmeg into a large bowl. In a separate bowl, whisk together bananas, both sugars, butter, milk and egg. Pour over the dry ingredients and fold to combine. Add 1/2 cup macadamia nuts and fold gently to combine. Divide batter evenly in muffin cups, 2/3 full. Sprinkle tops with the remaining chopped macadamia nuts. Bake until golden brown and a knife inserted into the center comes out clean, 20-25 minutes. Cool in pan 10 minutes, then remove to a wire rack to cool completely.
Notes
Variation: Omit macadamia nuts and sprinkle on Streusel Topping.
