Bacon Onion Cheddar Biscuits

2 cups flour
1 tsp baking powder
3/4 tsp salt
1/4 cup shortning
1/2 cup + 2 Tbsp milk
4 Tbsp vegetable oil
1 egg
10 slices thick bacon, crumbled OR
1 cup ham, finely diced
1 cup onion, finely diced
1 cup grated sharp Cheddar cheese
Preheat oven to 375. Sift together flour, baking powder, and salt. Using a pastry cutter, cut in shortening until all combined. Combine milk, oil, and egg in a separate bowl. Whisk together. Combine flour mixture, milk mixture, bacon, onions, and Cheddar cheese in a large bowl. Stir gently until all combined. Spoon batter into greased muffin tins. Bake 18-20 minutes until golden. Remove from pan and serve warm.
Notes
The biscuits don't rise much, so fill muffin cups as full as desired. They are quite tasty.
