Classic Apple Crisp

7 tart apples, peeled, cored, chunked
1 Tbsp lemon juice
1/2 tsp vanilla
1/2 cup flour
1 cup rolled oats
1 cup brown sugar
1/2 tsp ground cinnamon
1 stick butter, softened
Preheat oven to 375 degrees. In a medium bowl, toss the apples with the lemon juice and vanilla. Pour the apples into a 9x13-inch baking dish, spreading evenly to the edges. In a medium bowl stir together the flour, oats, brown sugar and cinnamon. Using a pastry blender, mix the butter into dry ingredients until coarsely mixed. Sprinkle the mixture evenly over the apples.

Bake 35-40 minutes, until the apples are tender and the topping is browned and crunchy. Cool 10-15 minutes before serving warm with ice cream or whipped cream.
