Heat oven to 350F and spray 8×8-inch baking pan with cooking spray Line with parchment paper or foil, leaving overhang on sides and spray paper or foil. Set aside. In bowl combine flour, cocoa powder, baking powder, baking soda, salt, and sugar until combined Add butter, egg, vanilla, and coconut extract and mix until combined. Gently press into prepared pan. Set aside
Topping Cream together cream cheese and butter in bowl until light and smooth. Add egg and mix well, then add cocoa powder and vanilla and mix until blended. Add powdered sugar gradually while beating until mixture is smooth. Fold in coconut. Dollop topping evenly over base and bake 30-35 minutes until edges are set and center is still wobbly. Cool in pan before lifting out and cutting into squares. |
