Bacon Macaroni and Cheese

1/2 lb small pasta
3 cups half & half
3 Tbsp butter
3 Tbsp flour
2 cups Cheddar, shredded
1 cup Mozzarella, shredded
1/2 cup Parmesan, grated
1 tsp rosemary, chopped
1 tsp thyme
2 Tbsp fresh basil, chopped
2 Tbsp green onion, chopped
4 cloves garlic, minced
1/8 tsp nutmeg
1/8 tsp cayenne pepper
salt, pepper to taste
6-8 slices bacon, cooked, crumbled
1/4 cup seasoned breadcrumbs
Cook and crumble bacon. Cook pasta according to pkg directions. In large pot over medium heat, melt butter. Add flour and whisk vigorously until smooth. Cook 1 minute and add 1 cup half & half, and continue to whisk until smooth, about 20-30 seconds. Add remaining half & half and continue whisking. Add rosemary, thyme, salt, black pepper, cayenne pepper, nutmeg, and minced garlic and mix well. Adjust seasonings to taste.

Increase heat to medium-high and allow mixture simmer, whisking continuously. When it is thick enough to coat back of a spoon, remove from heat. Add Parmesan and Cheddar cheese and stir gently until smooth, about a minute or two. Add pasta to cheese sauce and gently fold until completely coated. Fold in basil and green onion.

Preheat oven to 400. Transfer half of pasta and cheese mixture to a lightly greased baking dish. Sprinkle half Mozzarella cheese over first half of the pasta/cheese mixture, then pour remaining pasta/cheese mixture on top as a second layer and add remaining Mozzarella cheese on top.

Gently swirl a spoon throughout to ensure cheese is evenly combined. Sprinkle top with bacon and crumbs. Bake 25-35 minutes, or until golden brown and bubbly. Cool 10 minutes before serving.
