Pumpkin Spice Cupcakes

Cupcakes
1 pkg spice cake mix
1 cup sour cream
1 can (15 oz.) pumpkin
1/4 cup oil
3 eggs

Streusel Topping
1/2 cup sugar
1/4 cup flour
1 tsp pumpkin pie spice
3 Tbsp butter

Cream Cheese Frosting
1 8-oz. pkg cream cheese, softened
1/4 cup butter, softened
1 tsp vanilla
4 cups powdered sugar
1 1/2 tsp cinnamon
Heat oven to 350ºF. Beat cupcake ingredients with mixer until well blended; spoon into 24 paper-lined muffin cups. If choosing Streusel Topping, whisk together the flour, sugar, and pumpkin pie spice, then cut in the butter with two knives until the mixture resembles coarse crumbs. Sprinkle the topping over the batter.

Bake 20-22 min. or until toothpick inserted in centers comes out clean. Cool in pans 10 min.; remove from pans. Cool completely. Top with Cream Cheese Frosting if Streusel Topping was not used. 

Cream Cheese Frosting Beat cream cheese, butter and vanilla in large bowl with mixer until well blended. Gradually beat in sugar. Blend in cinnamon. Spread over cupcakes.
