Pumpkin Cookies with Caramel Frosting

1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 cup canned pumpkin puree
1 large egg
1 tsp vanilla
1 tsp baking soda
2 tsp ground cinnamon
1/4 tsp ea cloves, ginger, nutmeg
1/2 tsp salt
2 cups flour
Caramel Frosting
3 Tbsp butter
1/4 cup heavy cream
1/2 cup brown sugar
Pinch of salt
2 cups powdered sugar
1 tsp vanilla
Preheat oven to 350 degrees F. In a large bowl, cream together butter and sugars for cookies. Add eggs and vanilla and mix well. Stir in pumpkin. In a medium bowl, sift together baking soda, cinnamon, cloves, nutmeg, ginger, salt and flour. Add dry mixture to pumpkin batter and mix until combined. Drop dough by large spoonfuls onto a lightly greased or lined cookie sheet. Bake for 10-12 minutes.

Caramel Frosting  In a medium saucepan, combine butter, cream, brown sugar and salt, and cook over medium heat, stirring constantly, until mixture comes to a boil. Remove from heat and stir in 1 cup powdered sugar and vanilla. Let frosting cool to softened and stir in remaining 1 cup powdered sugar. Spread frosting over cooled cookies.
