Cheesy Green Bean Casserole

6 Tbsp butter, melted, divided
1 small onion, finely diced
1 Tbsp flour
1 tsp salt
1/4 tsp pepper
1 tsp white sugar
1 1/2 cups shredded Cheddar cheese
1 cup sour cream
3 cans green beans, drained
1/2 cup Ritz cracker or bread crumbs
Preheat oven to 350F. Melt 3 Tbsp butter in a large skillet over medium heat. Saute onion until softened but not brown. Stir in flour until smooth, and cook 1 minute. Stir in salt, pepper, sugar, grated cheese, and sour cream. May thin with milk Add green beans, stir to coat. Transfer to a casserole dish. In a small bowl, mix cracker or bread crumbs and remaining 3 Tbsp butter. Sprinkle over top. Bake 30 minutes until top is golden and bubbly.
Notes
Variations  For topping, crush french fried onions and mix with cracker crumbs, seasoned bread crumbs, or stuffing mix. May also add 1/2 c slivered almonds and 1 tsp Tabasco sauce.
