Raspberry Oatmeal Squares

1/2 cup brown sugar
1 cup flour
1/4 tsp baking soda
1/8 tsp salt
1 cup quick-cooking oats
1/2 cup butter, softened
3/4 cup raspberry (any berry) jam
1 cup walnuts, chopped
Coconut Variation
1-2/3 cups graham cracker crumbs
1/2 cup butter, melted
2-2/3 cups flaked coconut
1 can sweetened condensed milk
1 cup raspberry jam
1/3 cup walnuts, chopped  toasted
1/2 cup semisweet chocolate chips
1/4 cup white baking chips
Heat oven to 350°F and grease 9x9 pan. Mix brown sugar, flour, baking soda, salt, and oats in large bowl. Cut in butter with pastry blender until mixture is coarse crumbs. Press 2 cups oat mixture into pan. Spread jam to within 1/4 inch of edge. Mix walnuts with remaining crumb mixture; sprinkle over jam. Bake 30 min. or until lightly browned. Cool completely on wire rack before cutting into bars. May top with chocolate syrup drizzled icing, or whipped cream.

Coconut Variation  In a small bowl, combine cracker crumbs and butter. Press into a sprayed 13x9 pan. Sprinkle with coconut; drizzle with milk. Bake at 350° for 20-25 minutes or until lightly browned. Cool completely. Spread preserves over crust. Sprinkle with walnuts. In a microwave, melt chocolate chips; stir until smooth. Drizzle over walnuts. Repeat with vanilla chips. Cut into bars. Refrigerate for 30 minutes or until chocolate is set.
