Preheat oven to 350°F. Spray a 9x13 baking pan. Line a large, rimmed baking sheet with parchment paper. Mix flour, brown sugar, salt, and butter until combined. Mix pecans and oats until moistened. Reserve 1 cup oat mixture; press remaining into prepared pan. Transfer remaining crumbs to baking sheet. Bake crumbs until golden, stirring once, 8-10 minutes. Cool. Bake crust until golden,10-12 minutes. Remove from oven and set aside while preparing filling. Keep oven turned on.
Filling Mix all ingredients in blender until smooth. Spread over warm crust and bake until firm to the touch and edges are just slightly risen, about 18-20 minutes. Topping Whisk ingredients in bowl then spread evenly over baked filling. Bake until topping sets and bubbles at edges, about 5-7 minutes. Cool in pan, then sprinkle and press crumbs over topping. Cover, chill until cold, 2 hours. Cut into squares and serve. |
