Pumpkin Chocolate Chip Blondies

Recipe Added:  10/27/2012
2 1/3 cups flour
1 Tbsp pumpkin pie spice
1 tsp ea cinnamon, baking soda
3/4 tsp salt
1/2 cup butter, softened
1/2 cup applesauce
3/4 cup ea sugar, brown sugar
1 large egg
2 tsp vanilla
1 15-oz can pumpkin puree
2 cups semisweet chocolate chips
3/4 cup pecans; roughly chopped
Preheat oven to 350F. Line a 9x13 pan with parchment paper, leaving overhang. In a medium bowl, whisk flour, pumpkin pie spice, cinnamon, baking soda, and salt; set aside. In bowl of a stand mixer, cream butter, applesauce, sugar and brown sugar until smooth. Beat in egg and vanilla until combined. Add pumpkin and mix until combined. Mix in dry ingredients, stirring just until combined. Fold in chocolate chips and pecans.

Spread batter evenly in prepared pan. Bake until edges begin to pull away from the sides of the pan, 35-40 minutes. Cool completely in pan before lifting the bars out, cutting into squares and serving.

Notes
For a homemade pumpkin pie spice mix use the following, 1/2 teaspoon cinnamon, 1/4 teaspoon ginger and 1/8 teaspoon nutmeg and 1/8 teaspoon cloves. Mix together for the equivalent of 1 teaspoon pumpkin pie spice.
