Oatmeal Chocolate Chip Cookies

1 cup butter, softened
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 Tbsp vanilla
2 cups flour
1 cup regular oats
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 cups milk chocolate chips
1 cup walnuts, chopped
Chocolate Nut Cookies
1 1/4 cup brown sugar
1/2 cup shortning
1 egg
1 1/2 cups flour
1/2 tsp baking soda
1/4 cup milk
1 1/2 regular oatmeal
1/2 cup walnuts, chopped
1/2 tsp salt
1 1/2 cups chocolate/butterscotch chips
Preheat oven to 325. Line baking sheets. Beat butter and sugars with electric mixer until light and fluffy. Add eggs and vanilla and mix until combined. Mix dry ingredients, including oats and nuts. Add to butter/egg mixture and mix until combined. Add chocolate chips and mix by hand until just combined.

Using a 1/4 cup ice cream scoop, drop dough onto prepared baking sheets. Place 6 cookies per sheet. Bake 13-15 minutes or until light brown around. Remove from oven and cool 5 minutes on sheet and then transfer to a wire cooling rack and cool completely. Makes about 20-22 giant cookies.

Chocolate Nut Cookies
Mix all ingredients thoroughly. Bake at 350F 8-10 minutes.

LOVE these cookies. They are soft, chewy, and large.
