Pumpkin Seed Granola

6 cups rolled oats
1 cup raw pumpkin seeds
1 cup sunflower seeds
1 1/2 cups whole, raw almonds
1 cup coconut flakes
3 Tbsp sesame seeds
1/2 cup butter
1/4 cup real maple syrup
1/3 cup brown sugar
1/2 Tbsp vanilla
1 Tbsp ground cinnamon
1/2 Tbsp nutmeg
1 tsp cloves
Preheat oven to 250 degrees. Line 2 baking sheets with parchment paper and set aside. Place all dry ingredients + a dash of salt into a large bowl and stir. Melt butter, maple syrup and brown sugar together in a small bowl in the microwave, about 1 minute. Stir in vanilla, and spices. Pour entire contents over dry ingredients in bowl. Stir to coat evenly and spread evenly between 2 baking sheets. Bake 1 hour or until very golden brown. Remove from oven, cool completely, then store in air tight containers for up to 2 weeks.
