Light and Crispy Waffles

1 1/2 cups flour
1/2 cup cornstarch
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
2 cups buttermilk
2/3 cup vegetable oil
2 eggs
1 Tbsp sugar
2 tsp vanilla
Whisk together the dry ingredients. Add the wet ingredients and whisk until combined. Allow to stand for 30 minutes. Heat a Belgian waffle iron. Make waffles by ladling a generous 1/3 cup of batter into the waffle iron and cooking until golden brown. Serve with desired topping. Makes 10-12 waffles.
Advanced Preparation
Waffles may be refrigerated overnight instead of waiting 30 minutes in the morning, or go ahead and cook the waffles right away.
