Remove the tops of the strawberries and and cut out with a paring knife a little well to be filled. Mix together the cream cheese, powdered sugar and vanilla with an electric mixer until smooth and creamy. Fill the corner of a Ziploc bag with the cream cheese mixture. Twist the top of the bag and snip the corner of the bag with the filling. Squeeze filling into each strawberry and sprinkle with graham cracker crumbs. May also dip in melted chocolate. Store in the refrigerator.
