Lemon-Cherry Hot Cross Buns

1 1/2 cups warm milk (105F-115F)
1/4 cup butter, melted
1/2 cup sugar
1 egg, lightly beaten
1 Tbsp yeast
1 Tbsp lemon zest
1 tsp vanilla
4 1/2 cups flour
1 tsp salt
1/2 tsp nutmeg
1/4 tsp cinnamon
3/4 cup currants or Craisins
1/4 cup candied lemon peel
2 Tbsp each sugar and water
1 cup powdered sugar
1 Tbsp lemon juice
1/4 tsp vanilla
Mix milk, butter, sugar, egg, yeast, lemon zest, and vanilla. Let stand 5 minutes while the yeast dissolves. Add the flour, salt, nutmeg, cinnamon, Craisins and lemon peel and stir until the dough comes together. On a lightly floured surface, knead the dough gently until soft and elastic but still slightly sticky. Place in a lightly-oiled bowl, turning once to coat both the top and bottom. Cover it with a damp towel and let it rise in a warm, draft-free place for 90 minutes.

Grease a 9-inch round pan. Divide dough into 12 pieces, roll, and place in the pan. Cover with a damp towel and let rise for 45 minutes. Preheat oven to 375F then bake 30-35 minutes or until golden brown. During the last 10 minutes of baking, combine sugar and water in a small saucepan. Heat until the sugar is dissolved. When the buns are done and cooling, brush with the sugar water. Let the buns cool completely. Mix powdered sugar, lemon juice, and vanilla. Pipe a cross onto each bun. Let icing harden before serving.
