Cheesy Pull-Apart Bread

1 large loaf Italian or French bread
½ cup butter, melted
1 clove garlic, minced
1 bunch green onion, thinly sliced
2 cups Cheddar cheese, shredded
2 cups Monterrey Jack, shredded
Preheat oven to 350 F. Spray a sheet of foil and set aside. Cut a cross pattern into the top of the bread by slicing ½-inch grid lines into the bread, stopping about ¼-inch from the bottom of the bread so that it stays together. Place the bread on the piece of foil that has been sprayed.

Stir together melted butter, garlic and onions. Separate bread with fingers, then spoon butter mixture in all seams, until evenly distributed. Wrap loaf in the foil and place directly on the oven rack; bake 10 minutes. Remove from oven and increase temperature to 425F. Open foil and press the shredded cheese into the bread. Leave foil open and return to the oven. Bake until cheese is melted and bubbling, about 15 minutes. Let stand for 5 minutes before serving, then sprinkle with parsley, if desired.
