Preheat oven to 350F. Line or spray baking sheet and set aside. In mixer, beat butter and sugar on medium speed until light and fluffy. Beat in vanilla and salt until combined. Reduce speed to low and gradually add flour, beating just until combined. Fold in pecans. Roll dough into 1½-inch balls or use medium-size cookie scoop and place on baking sheet. With tdampened bottom of a glass, lightly flatten each ball. Bake until golden brown, 15-17 minutes, rotating pan halfway through. Transfer to a wire rack and cool. Store in an airtight container for up to 5 days. |
