In a large saucepan, combine chicken broth, carrots, celery, potatoes and onion. Bring to a boil, cover and simmer 10 minutes, until vegetables are starting to get tender. Add broccoli, cover and simmer another 10 minutes. In a separate saucepan, saute bacon until crisp. Remove bacon to a paper towel-lined plate. Drain grease and wipe out saucepan. Melt butter over medium heat in same saucepan. Whisk in flour and cook 1-2 minutes until golden, stirring constantly. Gradually whisk in milk and cook until bubbling and slightly thickened, 5-7 minutes.
Stir in cheese one handful at a time, adding after last handful has melted. Stir in salt, pepper and mustard. Slowly stir cheese sauce into hot broth and vegetables, whisking to combine. Stir in reserved bacon and add additional salt and pepper to taste, if needed. To thin, stir in a little extra broth or milk to desired consistency. |
