Date Nut Bars

Recipe Added:  1/8/2014
1 1/2 cups butter, melted, cooled
1 1/2 cups dates, diced
1 1/2 cup walnuts, chopped
1 cup pecans, chopped
2 cups flour
1/2 tsp salt
1/4 tsp baking powder
3/4 cups brown sugar
3/4 cups sugar
4 eggs, room temperature
1 tsp vanilla
Preheat oven to 350. Grease or spray one 9x13 pan or two 9x9 pans. Combine dates and nuts, set aside. Sift flour, salt, and baking powder into a bowl. Set aside. Mix remaining 1 1/4 cup melted butter and sugars until well incorporated. Add eggs one at a time, mixing well after each addition. Add vanilla. Reserve 1/4 cup flour mixture. Dredge date and nut mixture with reserved flour. Mix in rest of flour mixture with wet ingredients, by hand, until just incorporated.

Fold in dredged dates and nuts with batter. Pour batter (it will be very thick) onto pan. Bake 30-40 minutes, until light golden brown.  Bars are done when a toothpick inserted in center comes out with moist crumbs. Cool, and cut into bars or squares. Store these in an airtight container. They will stay moist if wrapped tightly.
