Almond Ramen Coleslaw

2 16-oz bags coleslaw mix
1 cup sunflower seeds
1 cup sliced almonds
1 bunch green onions, chopped
2 3-oz pkgs Ramen noodles, crushed

Dressing:
1 cup vegetable oil
½ cup sugar
1/3 cup white vinegar
2 Ramen noodle seasoning packets

In a large bowl, mix together the coleslaw mix, sunflower seeds, almonds, green onions and crushed Ramen noodles. In a small bowl, whisk together the oil, sugar, vinegar and seasoning packets until well blended. Pour the dressing over the coleslaw mixture and toss until it is evenly distributed. Refrigerate until ready to serve.
Notes
To avoid overly soft noodles, mix everything together EXCEPT the crushed noodles and the dressing. Toss it all together 30 minutes before serving.

Variations: May also add cooked chicken for a main dish, or use broccoli slaw in place of one coleslaw bag. May toast almonds and sunflower seeds before using, if desired.
