ZZ Pasta Carbonara

1 lb spaghetti
8 slices thick cut bacon, diced
2 garlic cloves, minced or pressed
4 large eggs
1 cup grated Parmigiano-Reggiano
salt and black pepper to taste
2 Tbsp chopped fresh parsley leaves
Cook pasta according to pkg directions. When pasta is done, reserve 1 cup pasta water and drain well. Meanwhile, cook bacon over medium-high heat until crisp. Remove bacon from the skillet and pour off all but two Tbsp of bacon grease. Add the garlic to the skillet and cook for one minute on low heat. Remove from heat.

In a bowl, mix together eggs and Parmesan. Add 1/4 cup hot pasta water, hot pasta and the egg mixture to the skillet and stir quickly until the eggs thicken. Add additional pasta water a little at a time until desired consistency is achieved. Gently toss in bacon and season with salt and pepper to taste. Serve immediately, garnished with parsley and additional Parmesan, if desired.
