Buttered Pretzels

Dough
2 1/2 cup flour
1/2 tsp sea salt
1 tsp sugar
2 1/4 tsp instant quick rise yeast
1 cup warm water (110 F)
Topping
1/2 cup warm water
1 Tbsp baking soda
vegetable oil
coarse sea salt, for sprinkling
3 Tbsp butter, melted
Combine dough ingredients in bowl of a stand mixer with paddle attachment, and mix until combined. Change to dough hook and knead on medium low 5 minutes. The dough should feel soft and smooth, not sticky. Lightly dust dough with flour, then place in bowl, cover, and let rise 30 minutes.

Preheat oven to 450 F, and lightly grease a baking sheet with vegetable oil. Place dough onto a lightly oiled countertop. Divide/cut dough into 8 pieces. Whisk to combine warm water and baking soda and heat in  microwave 1 minute. Roll each of eight pieces into a long rope, and shape into a pretzel (see blog link). Dip each pretzel into soda wash and place onto baking sheet. Sprinkle with coarse sea salt; let rest 10 minutes.

Bake 9-10 minutes until golden brown. Brush pretzels with melted butter while hot. Serve immediately.
