ZZ Peppermint Cheesecake Cookies

1/2 cup butter, softened
3/4 cup sugar
1 large egg
1 tsp vanilla
2 Tbsp cheesecake instant pudding mix
1 1/2 cups flour
1/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 tsp cream of tartar
3/4 cup peppermint baking chips
Line 2 baking sheets with baking mats. In a large bowl orsstand mixer, cream together butter and sugar until light and fluffy. Beat in egg, vanilla, and pudding mix until blended. Add flour, salt, baking powder, baking soda, and cream of tartar, and mix until a dough forms. Fold in baking chips.

Shape dough into small balls. Place balls on baking sheet and sprinkle additional peppermint chips on top. Chill for 30 minutes before baking. Bake at 350F for 8-9 minutes (cookies may look underdone, but will finish baking on sheet while cooling). Cool 5-10 minutes before removing from baking sheet to a cooling rack.
