Turtle Candies

10 dozen pecan halves
1 14-oz bag caramels, unwrapped
2 Tbsp water
1 12-oz bag milk chocolate chips
1 Tbsp shortening
Line a baking sheet with parchment paper. On the baking sheet arrange clusters of five pecans in the shape of a turtle's head and four legs. In a saucepan over medium-low heat, combine caramels and water, stirring constantly, until completely melted and smooth. Spread a spoonful of caramel sauce over each pecan cluster, ensuring that the caramel is touching each pecan. Place in the refrigerator until set, about 15 minutes.

Put chocolate chips and shortening in bowl in microwave on 50% power, stirring every 30 seconds, until completely melted. Spread a spoonful of melted chocolate on top of the caramel and set at room temperature until chocolate is set, about 30 minutes.

The turtle candies can be stored in an airtight container, layered between wax paper, at room temperature. May also be stored in refrigerator, but let come to room temperature before serving if cold.
